New Bacteria That Makes Apple Juice Go Bad Identified
Contamination of foods and beverages by undesirable microbes can be a safety concern and lead to waste, consumer dissatisfaction and economic consequences for manufacturers. In order to ensure the quality of these products, food testing laboratories rely on the ability to identify and detect the species and biochemicals that cause food to go bad. Researchers at Cornell University have discovered three new bacteria species that can be found in apple juice, one of which produces a compound that contributes to unusual flavors.
